Villa Del Sol Brings Family Story, Authentic Flavors to Taylorsville

Villa Del Sol Ribbon CuttingBefore Villa Del Sol became a restaurant, it was a family garage filled with the aromas of pozole, menudo and other traditional Mexican dishes.

Owner Silvia Aguirre’s love of cooking began at a young age, eventually leading her and her family to start selling food from their home. The food quickly drew a following, and what started small grew into Villa Del Sol’s first restaurant in Orem. Now, that same family story and menu of Mexican favorites has come to Taylorsville.

Taylorsville City and ChamberWest officials celebrated the grand opening of Villa Del Sol with a ribbon cutting on June 10. The restaurant is now open at 4169 S. Redwood Road.

The menu features a wide variety of traditional Mexican dishes, including pozole, menudo, Birria Guadalajara, molcajete, street tacos, ceviche, enchiladas, chilaquiles and desserts such as flan, tres leches and chocoflan.

Aguirre also designed the Taylorsville restaurant, creating a light and airy space for guests. “I’m happy I could add my grain of sand to the setting,” she said in Spanish.

City and ChamberWest representatives experienced that hospitality firsthand during the grand opening celebration.

“Before we could even cut the ribbon, they said, ‘How about we feed you,’” Mayor Kristie Overson said at a recent City Council meeting. “So, they fed us dinner and they did not hold anything back. The food was delicious, and it was so much fun. It was also inspiring to hear their story and how they ended up locating in Taylorsville.”
